I have had a hard time adjusting to the food out here. It's either German or Amish food and also a lot of Sub places. Being the Mexican that I am, I love Mexican food. We tried a place out here that was ok, but there's nothing like the Mexican fast food in Utah - Costa Vida, Cafe Rio, Rubio's...the list goes on. It seems everyone from Utah away from Utah has Cafe Rio night and makes salads. I myself prefer a pork burrito with medium sauce. So I decided to make Cafe Rio burritos. They were pretty good. Well, I should say I thought they were so good until Scott brought me a burrito from his trip back home. I'm completely jealous of everyone who can get Cafe Rio anytime they want. When we go home for Christmas I will eat there at least 3 times a week. Luckily, Scott is going to Utah for a few weeks in March so I won't have to go too long with out some delicious food.

We're so glad your burrito made it safely and reheated well. We were afraid that Security would confiscate it! (Note to anyone else trying this--Scott took it on the plane frozen solid. Avoiding food poisoning is always a good thing!) Sheila
